When Pooja Bavishi set out to establish her ice-cream business, Malai, she managed to do this with clarity and a personal view. "I launched Malai as I was looking to highlight the tastes which I grew up with as a young Indian American in a popular and mainstream manner," she says.
"Everyone has been a victim an ice cream moment from their childhood and it is usually associated with visiting your local ice cream shop to enjoy a sweet treat or an ice cream cone with beloved people," Pooja says. This fusion that is nostalgic can be observed in Malai as an ice cream stand-in in market and local food halls to freezers inside food stores, pop-up carts all over New York City, and an incredibly popular flagship store located in Brooklyn offering local and national delivery.
